Grilled Coho with Grilled Pineapple Rings

Marinade Assembly:

Combine all the ingredients in a baking dish and mix well. Add salmon and marinate for 2 hours in refrigerator. Turn over several times during the marinating process.

Grilling:

Pre-heat grill. In a bowl, mix sugar and cinnamon. In a separate bowl, pour in coconut milk. Dip pineapple rings, one at a time in the coconut milk. Then dip it in cinnamon mix covering both sides. Grill at the same time as the salmon.

Remove coho from marinade and place on hot grill, skin side down. Cook for 2-3 minutes a side. Grill and turn pineapple in conjunction with salmon. Place pineapple on the salmon and serve with rice.

Ingredients:

6 - five oz. Pieces coho, skin on

Marinade:

1 can unsweetened coconut milk
1 8 oz. bottle lime juice
1 cup brown sugar
1 clove Garlic, minced
2 Tbl fresh ginger, minced
¼ cup soy sauce
½ bunch cilantro, chopped

Grilled Pineapple:

6 pineapple rings
¼ cup sugar
1 Tbl cinnamon
½ cup coconut milk, unsweetened

Waterfall’s 4 Hottest Fishing Spots!

This week: Rockpile!

With July well under way, so is our pursuit for larger king salmon. During this month, our guides will be hitting such hotspots as Pineapple, Granite Point, Rockpile and Cape Ulitka. Year after year, these spots prove to hold some of the largest king salmon that we catch on the outside of Prince of Wales Island. Just ask Brian Mayberry!

Rockpile, on the seaward side of Noyes Island, just north of Pineapple. produces its fare share of large king salmon and silver salmon. Another nice item that Rockpile offers is the fishing is generally spread out over a little larger area providing less “combat fishing” scenarios. Rockpile is a spot that most guides cannot pass up when passing by.

July 24, 2009: Cheers went up for Guide Rizwan Sheikh and Boat #17 in celebration of another big
catch at Waterfall. Guest Brian Mayberry, with the Jim Click Ford Group, brought in a
60.5 lb. King caught at Pineapple! Brian says he has been working hard selling cars in order to be included into the top 15 sales positions for the Tuttle-Click Ford Group, Green Valley, AZ. Brian finally won his dream trip this year!! He said it took him about 45 minutes to reel in the big catch. According to Brian, “It jumped out of the water twice and we followed it for about 1/2 a mile before finally getting it onboard the boat!” After Brian returned home, he wrote to tell us: “This trip wouldn’t have been possible without my employer Jim Click and the Jim Click Automotive Team. The trip to Waterfall Resort was a trip of a lifetime. This wasn’t my first rodeo, but it was definitely the best from the accommodations to the food and to the staff and guides. My personal guide was “Riz” who lives and breathes fishing. In fact, all of the guides were top notch. I will be returning with friends and family. Thank you everyone at Waterfall Resort for your hospitality, professionalism and fun! PS: Thank you for the 60.5 lb. Trophy King over my mantle.” Congratulations, Brian, we can still feel your dockside excitement throughout the Resort!

We always appreciate the enthusiastic letters we receive from guests re-capping their fishing adventures at Waterfall. Captain Joe Cotter, a professional guide and Charter Captain, Miami Beach, FL, sent us this description of his action-packed days at the Resort:

As a professional fisherman in Miami, I am always looking for a way to escape the summer heat while at the same time finding a good bite someplace a little further north. Usually this consists of fishing in Boston with my father, Bob, but this past July, I was fortunate to make my way up to Alaska in search of some salmon and and halibut fishing. Waterfall Resort let me know I was in for a hot bite and a beautiful scene right from the get go. After a quick 45 minute seaplane flight from Ketchikan, we not only saw beautiful evergreen cliffs falling off into calm seas, as well as whales and bald eagles, but also we caught our limit of 24 silvers (coho salmon) and a king salmon on the first bait dropped in the water. The next three full days and the final half-day offered more of the same. On the second day, we encountered a lingcod bite that just wouldn’t quit. Using a one lb. bullet-head jig with a white plastic worm tail, it quickly turned into a competition of who could catch the most lings on one drift. We ended up keeping our limit of upper end slot limit fish while releasing over thirty lings up to 45 lbs. In 5 days, our boat caught over 80 silvers, 8 king salmon, 40 lingcod, 12 yellow-eyed rockfish (snapper to the locals) and 30 halibut. Although we had some great action, the other boats off the dock really trumped us on the trophy fishing weighing in many halibut over 100lbs. with one over 200 lbs. In our short stay, we saw three 50+ lb. kings and weighed in with many more between 30-50lbs. Many of our fish were released unharmed, while another good portion ended up frozen, vacuum packed and shipped home for many good meals. My trip is already in the works for next year and I can’t wait to see if we can top this past trip.

Steve’s Sidebar: Joe started fishing seriously for stripers and blue fish around 12 years ago, then switched to tunas and sharks around ten years ago. He became a pro in 2004. Lately, he has been kite fishing for sailfish and other species in Miami, and wahoo and marlin fishing in the Bahamas for the past 3 years. Joe and his dad, Bob, finished second in the second leg of the 2007 Bahamas Wahoo (Tuna) Challenge.

MONSTER HALIBUT! MONSTER WEEK!
The record catches keep coming in! High-fives filled the Resort last week for Waterfall’s largest halibut of the season! Jason Capra, Palm Harbor, FL, (the Boesch Group), brought aboard his 288 lb. Halibut on 7/14/09! What a story Boat 19, helmed by Guide Sean Fitze, had to tell when they returned! According to Waterfall’s Derby Hostess Emily Urbaniak, “It was quite the spectacle on the dock that day and the crowd got so quiet when they were about to weigh it, you could almost hear everyone simultaneously gasp. Pretty awesome, actually!” Emily continued her “Dockside Doings” with the report that Waterfall had an across-the-board record-setting week!

There were three 50+ Kings caught last week: Dan Rowe 55.9, Martin Gilmartin, 54.3, Robert Loiselle, 53.9!! In addition to Jason Capra’s Halibut, guests brought in season records for Silver Salmon and Red Snapper! Kudos and Congrats to Garret Vanderlinde for his 20 lb. Red Snapper and Allen Price for his 13.4 lb. Silver Salmon!

We always say that Waterfall is the place where the fishing stories are true! Last week testified to that!

As July has now started, so has our pursuit for larger king salmon. During this month, our guides will be hitting such hotspots as Pineapple, Granite Point, Cape Ulitka, and Rockpile. Year after year, these spots prove to hold some of the largest king salmon that we catch on the outside of Prince of Wales Island.

Granite Point, a well known commercial salmon fishing zone, is located on the seaward side of Baker Island. Granite Point is not only well known for the salmon it produces year after year, but also for the halibut fishing that can be found in some of the deeper areas. At certain times of the year, what we refer to as “one stop shopping” can be found here, as one can fish and catch just about every species being targeted.
